Trump Winery 2019 Blanc de Blanc
The 2019 Blanc de Blanc is crafted exclusively from 100% estate-grown Chardonnay. Aged for a minimum of 48 months on lees, this méthode champenoise sparkling wine develops a refined, creamy mousse and an extended, silky mouthfeel. Vibrant notes of green apple and fresh citrus lead on the palate, complemented by layers of brioche, toasted almond, and subtle yeast complexity. Bright acidity and fine bubbles create excellent balance and structure, culminating in a long, elegant finish.
Oysters, aged cheeses.
Usually it’s the high acidity of a sparkling wine that you have to pay attention to when pairing, but the aging process of this wine not only balances the mouthfeel, but adds some savory notes as well.
It’s still going to be perfect for the classics like oysters and shellfish (go for the seafood tower here), but it will also be able to cut through some butter sauces and richer textures as well.
You still probably want to stay away from grilled red meat and tomato-based sauces, but other than that it’s going to be hard to find something this doesn’t pair well with.
Stand out features: Elevated acidity, soft mousse, bright citrus.
This is a general guide to give you an idea where this wine falls in a spectrum of dish complexities.
Rich, smokey red meats or anything with a heavy sauce. There’s an elegance to this wine that can get overpowered at the heavy end of the spectrum.
Flutes and coupes are great for the traditional celebratory feel. (I realize coupes aren’t great for aromatics, but sometimes ya gotta live a little.)
All-purpose and white wine glasses are best for capturing the full potential of the wine.
Decanting a sparkling wine may seem odd, but some can benefit from it.
This wine does start to open up nicely, but it’s probably better off happening in your glass than a decanter.
The correct serving temperature is important to show a wine’s true potential, but don’t stress over getting the temp exactly right. Use the chart below to try to get in the right ballpark.
If a wine has been released by the producer and is available for sale, it means it is ready to drink. Wines don’t necessarily get “better” with age, they just change. Typically, this change involves things like losing fresh fruit flavors in exchange for more savory notes.
The moment you should open the bottle depends on your preference, so it’s more important to understand the evolution and the life span of the bottle than it is to try to time its opening perfectly. (It’s far better to open a bottle too early than too late.)
This bottle should probably be opened between:

This was a great vintage for most of Virginia.
There was almost no late frost to damage vines, and the growing season very warm and dry. A lot of grapes ripened early, giving vineyard managers the benefit of picking early before rainfall started in the fall.
Overall, this should be a produce wines with riper fruit flavors and good balance.
