ABOUT

Flying Fox 2023 Trio

The Flying fox 2023 Trio is named as such for the 3 varieties blended together for this wine: Cabernet Franc, Merlot, and Petit Verdot, with each add their own unique characteristics to the wine. Red fruits and black pepper from the Cab Franc, smooth texture and earthy notes from the Merlot, and deep color and rich dark fruits from the Petit Verdot.

These varieties also enjoyed one of Virginia’s best vintages in recent history, allowing them to ripen fully and show off a firm, balanced structure.

PAIRINGS

IN A PINCH

Lean red meat and pasta with red sauce.

DEEPER DIVE

This Cab Franc has depth and complexity, yet is still approachable and very much a food-friendly wine.

The tannins aren’t too prevalent, so it’s probably best to stick to leaner cuts of meat and lamb, especially if grilled.

Salty cheeses and younger cheddar would be great here as well to pair nicely with this wine’s elegance.

STANDOUT FEATURES

  • Smooth Mouthfeel
  • Linear Acidity
  • Soft Tannins

STEAR CLEAR

Anything too rich or fatty might overpower this wine.

SHOULD I DECANT THIS?

WHY “Up to you”?

There’s enough complexity in this wine to call for some decanting, but it opens up pretty quickly out of the bottle, so you could get away with some generous swirling.

HOW LONG?

Generally you would want to decant a younger wine for longer to help it open up and be cautious of exposing older wines to oxygen for too long. There are always exceptions of course, but this is a pretty good rule to follow.

The correct serving temperature is important to show a wine’s true potential, but don’t stress over getting the temp exactly right. Use the chart below to try to get in the right ballpark.

AGING

WHEN SHOULD I OPEN THIS?

If a wine has been released by the producer, it means it is ready to drink. Wines don’t necessarily get “better” with age, they just change. Typically, this change involves things like losing fresh fruit flavors in exchange for more savory notes.

The moment you should open the bottle depends on your preference, so it’s more important to understand the evolution and the life span of the bottle than it is to try to time its opening perfectly. (It’s far better to open a bottle too early than too late.)

FLYING FOX VINEYARD

MONTICELLO AVA

RIDGE RUN VINEYARD

SHENANDOAH AVA

We have two separate vineyard sites, which allow us to use climactic variability to our advantage. Our Flying Fox Vineyard is located in the Monticello AVA and as a warmer site is where we grow all of our red varieties. Ridge Run Vineyard in the Shenandoah AVA is a cooler, higher site and is where we grow our whites.

Hi there.

We are Emily, Elliott, Chloe, George and Tralyn, together we have half a century’s worth of experience in the Virginia wine industry. Flying Fox is our opportunity to play with Virginia wine unencumbered by the need for events, wide-spread wholesale distribution and food. Flying Fox quite simply is our place to truly focus on wine and how best to make it.
