Chestnut Oak 2023 Cabernet Sauvignon
The 2023 Chestnut Cabernet Sauvignon is a full, but elegant wine with an array of red and black fruit on the nos e and palate. The addition of Petit Verdot adds depth and color to the wine, while the Merlot brings plum, dark cherry, and a round, smooth texture.
Blue Cheese, rich cuts of steak.
This wine is going to shine brightest when paired with fatty cuts of meat where the tannins can go to work and balance out the meal.
There’s some earthiness to the wine as well, so the grill is a great option to let the char and smoke complement those notes.
Aged cheeses, especially blue cheeses are going to be great to complement that earthiness as well, and will also match the wines acidity to make for a great pairing.
Seafood is not going to be a great option at all here due to the elevated tannins.

The correct serving temperature is important to show a wine’s true potential, but don’t stress over getting the temp exactly right. Use the chart below to try to get in the right ballpark.
If a wine has been released by the producer, it means it is ready to drink. Wines don’t necessarily get “better” with age, they just change. Typically, this change involves things like losing fresh fruit flavors in exchange for more savory notes.
The moment you should open the bottle depends on your preference, so it’s more important to understand the evolution and the life span of the bottle than it is to try to time its opening perfectly. (It’s far better to open a bottle too early than too late.)

In addition to our estate production, we produce wines from non-estate fruit such as Sparkling wines made from Chardonnay grapes. The Sparkling wines are produced entirely in house using traditional methods.
In 2006, we planted one acre each of Cabernet Sauvignon and Petit Manseng. We expanded our plantings in 2014 and 2015 with Merlot, Petit Verdot, Viognier, Nebbiolo.
We utilize precise and integrated farming techniques to develop our vineyard in the best way that suits each vintage. Most of the work is done by hand under the careful guidance of our winemaker and our skilled vineyard management team.
Our wine club members receive a 20% discount on wine purchases online or in the tasting room. Membership includes quarterly releases in March, June, September, and December. The wines can be either shipped or picked up in the tasting room, and we’ll host a pick up party for each release.
