ABOUT

Centorri  NV Moscato

Moscato di Pavia is identical to it’s sibling, Moscato d’Asti. Both are low alcohol, the only difference is that it hails from the neighboring town of Pavia rather than Asti. Slightly sweet and delicately bubbly, this wine pairs with a wide range of food from spicy Asian cuisine to fresh picked fruit. After gently pressing the grapes the temperature is quickly brought down mid fermentation. The grapes and. must are removed, leaving the telltale residual sugar. This wine is bottled immediately after fermentation for maximum freshness.

Soria Sergio has the Equalitas certification which addresses sustainability according to social, environmental and economic pillars at three industry levels. Those three levels are the Organization, Product and Terroir and are met by verifiable and measurable indicators.

PAIRINGS

IN A PINCH

Rich, creamy cheeses. Tiramisu.

DEEPER DIVE

Moscato di Pavia has a wide range of cards to play for food pairings. Often served with Italian dessert classics such as tiramisu or cannoli, the delicate floral notes go well with a dense cheese such as marscapone.

Served at a picnic try it with some fresh picked strawberries and a triple cream. If you really want to wow folks serve it as an option with your favorite spicy Thai dishes.

Stand out features: Sweetness, effervescence,  bright floral notes.

PAIRING SCALE

SHOULD I DECANT THIS?

WHY “Nope“?

Meant to be drank right out of the bottle, doesn’t benefit from oxygen exposure.

SERVING TEMP

The correct serving temperature is important to show a wine’s true potential, but don’t stress over getting the temp exactly right. Use the chart below to try to get in the right ballpark.

AGING

WHEN SHOULD I OPEN THIS?

If a wine has been released by the producer, it means it is ready to drink. Wines don’t necessarily get “better” with age, they just change. Typically, this change involves things like losing fresh fruit flavors in exchange for more savory notes.

The moment you should open the bottle depends on your preference, so it’s more important to understand the evolution and the life span of the bottle than it is to try to time its opening perfectly. (It’s far better to open a bottle too early than too late.)

This bottle should probably be opened between:

ABOUT US

Enologist Eleonora Brangero and her husband Matteo Soria own a winery in the commune of Castiglione Tinella within the Asti denomination where they have long made Moscato d’Asti. In 1996, they purchased 10 acres of Moscato vineyards in Pavia, just across the border from Piedmont in the region of Lombardy.

The new property was named Eleanor Estate after Brangero. For several years, they sold the grapes to other producers, but in 2009 they began a project to make a new line of wine under the direction of Brangero. The project was named Centorri, a reference to the city of Pavia’s famous hundred towers (cento torri).

Centorri is owned and managed by women: estate manager and winemaker Eleonora Brangero, along with her mother Emiliana and grandmother Camilla—known as the “ladies of Moscato.” The wine is made from 100% Moscato Bianco grapes, mostly grown in the Pavia vineyards which have now expanded to 84 acres, with a small portion coming from the Piedmont estate. Vinification takes place at the family winery in Castiglione Tinella.
